Chocolate Dipped Fried Dough Rings

A Mexican-inflected take on the classic fried cake donut: a cinnamon-spiced dough ring fried to a deep golden crust, finished with a dip in dark chocolate and a dusting of cinnamon sugar on the fried holes. The warmth of the cinnamon dough against the bittersweet chocolate nods to the pairing of churros and Mexican hot chocolate, reshaped into a ring doughnut format.

Instructions

1
Whisk together the flour, sugar, baking powder, salt and cinnamon in a bowl.
2
In a separate small bowl, beat the egg with the milk, melted butter and vanilla extract.
3
Pour the wet mixture into the dry ingredients and stir just until a soft, slightly sticky dough forms — do not overmix.
4
Turn the dough onto a well-floured surface and pat gently to about 1.5cm thickness.
5
Cut two rings using a small round cutter with a smaller cutter punched from the centre, re-forming scraps as needed to get two donuts and their holes.
6
Heat the vegetable oil in a deep, heavy pan to 175°C (350°F), checking with a thermometer.
7
Fry the donuts in the hot oil for about 90 seconds per side until deep golden brown and cooked through, then lift onto a wire rack lined with paper towels to drain.
8
Let the donuts cool for 5 minutes, then melt the dark chocolate over a double boiler or in short microwave bursts.
9
Dip the top of each donut into the melted chocolate, letting excess drip off, then dust the holes with the cinnamon sugar.
10
Let the chocolate set for a few minutes before serving.
