Instructions
1
In a bowl, whisk together the glutinous rice flour, rice flour, baking powder and 10g sugar.
2
Blend the low-fat cottage cheese until smooth, then whisk it with the whole milk and melted butter.
3
Combine the wet and dry mixtures into a soft, slightly sticky dough; do not overwork.
4
Divide the dough into 8 small balls and arrange them touching in a ring on a piece of parchment to form one donut shape (classic pon de ring style), repeating for a second ring.
5
Heat the vegetable oil in a small deep pan to 160°C (320°F), checking with a thermometer.
6
Lower each parchment-backed ring into the oil, peeling away the paper once it releases, and fry for 90 seconds per side until golden and just cooked through.
7
Lift out onto a wire rack set over paper towel to drain excess oil.
8
Whisk the remaining sugar with a few drops of water to a thick glaze and drizzle over the warm donuts.
9
Scatter the toasted desiccated coconut over the glaze before it sets and serve.
