Instructions
1
Rub chilled cubed butter into sifted flour and sugar until the mixture resembles coarse crumbs, then bind with the beaten egg yolk into a dough; wrap and chill for 30 minutes.
2
Simmer pitted dates in a splash of water until soft, then mash to a thick paste standing in for sweet chestnut puree; cool slightly.
3
Whisk the date paste with almond flour, whole milk, beaten egg, honey, dark rum, vanilla extract and orange zest until smooth and glossy.
4
Roll the chilled dough thin on a floured surface and line two 8cm individual tart tins, trimming and pricking the bases with a fork.
5
Pour the chestnut-style filling into the lined tins, levelling the tops with the back of a spoon.
6
Bake at 180C/350F for 28-32 minutes until the pastry is golden and the filling is just set with a slight wobble in the centre.
7
Cool the pies on a wire rack for at least 15 minutes, then scatter over the toasted pine nuts just before serving.
