Cheese and Bacon Custard Tart

Cheese and Bacon Custard Tart

A low-carb riff on the classic French quiche-tart, swapping the usual wheat pastry for a buttery almond flour crust and building the smoky, savoury filling from fried paneer in place of bacon lardons, with cottage cheese folded into the custard for extra protein and richness without the carb load.

Instructions

1
Heat the oven to 180C / 350F. Mix the almond flour, melted butter, 1 egg yolk and a pinch of salt into a soft dough and press evenly into two 8cm individual tart tins, working it up the sides.
2
Chill the pressed shells for 10 minutes in the freezer, then blind-bake for 12 minutes until just set and pale gold; cool slightly on a wire rack.
3
Meanwhile fry the crumbled paneer in a dry pan over medium heat for 3-4 minutes, tossing often, until the edges turn golden and salty-savoury to mimic crisp bacon lardons.
4
Blend the cottage cheese until completely smooth, then whisk it with the whole egg, heavy cream, cracked black pepper and ground flaxseed until fully combined and lump-free.
5
Scatter the fried paneer pieces into the warm tart shells, pour the custard mixture over to fill each shell almost to the rim.
6
Return the tarts to the oven and bake for 16-18 minutes until the custard is just set with a slight wobble in the centre.
7
Cool on a wire rack for at least 10 minutes before unmoulding; serve warm or at room temperature.
