Instructions

1
Preheat oven to 170°C (340°F). In a bowl, mix almond flour, melted butter, a third of the beaten egg, and salt into a dough; press evenly into 2 x 8cm individual tart tins, working it up the sides.
2
Blind-bake the crusts for 10 minutes until just set and lightly golden, then set aside to cool slightly.
3
Meanwhile, melt the second portion of butter in a small pan over low-medium heat; add the thinly sliced carrot and a pinch of allulose, and cook slowly for 15-18 minutes, stirring often, until deeply softened and browned to mimic caramelized onion.
4
In a bowl, whisk the remaining egg with cream cheese, heavy cream, and black pepper until smooth.
5
Divide the caramelized carrot between the two baked crusts, then pour the cream cheese filling over the top.
6
Return the tarts to the oven and bake for 16-18 minutes until the filling is just set with a slight wobble in the centre.
7
Cool in the tins for 10 minutes before gently unmoulding and serving warm or at room temperature.
