Caramel Cheese Custard

Caramel Cheese Custard

A protein-boosted take on classic Spanish flan de huevo, swapping the usual cream and whole eggs for blended low-fat cottage cheese, skim milk and a cocoa-powder fibre boost, baked low and slow in a water bath beneath a thin layer of hardened caramel.

Instructions

1
Heat the sugar with the water in a small pan over medium heat, swirling gently (do not stir) until it turns deep amber, about 4-5 minutes.
2
Immediately divide the hot caramel between 2 ramekins, tilting each to coat the base evenly, then set aside to harden.
3
Blend the cottage cheese until completely smooth, then warm the skim milk gently until just steaming, not boiling.
4
Whisk the egg, egg white, cocoa powder and stevia together in a bowl, then slowly whisk in the warm milk and blended cottage cheese until fully combined.
5
Stir in the vanilla extract, then strain the mixture through a sieve into the caramel-lined ramekins for a silky texture.
6
Place the ramekins in a deep baking tray and pour hot water halfway up their sides to create a water bath.
7
Bake at 150C/300F for 35-40 minutes until the custards are just set with a slight wobble in the centre.
8
Remove from the water bath and cool to room temperature, then chill in the fridge for at least 4 hours or overnight.
9
Run a thin knife around the edge of each ramekin and invert onto a small plate to release the custard and let the caramel sauce pool around it.
