Baked Stuffed Apples
A French-leaning baked apple dessert built for the sweet-glp1 gate: whole apples hollowed and packed with a cinnamon-spiced cottage cheese and raspberry filling boosted with whey protein isolate, then baked until tender and finished with a cool spoonful of Greek yogurt.

Instructions
1
Preheat the oven to 190°C (375°F).
2
Core the apples from the top down, leaving the base intact, and use a spoon to widen the cavity slightly, keeping the scooped flesh aside.
3
In a bowl, mash the scooped apple flesh with the raspberries, then stir in the cottage cheese, whey protein isolate, cinnamon, allulose and lemon juice until evenly combined.
4
Spoon the filling into the hollowed apples, packing it down gently, and scatter the chopped walnuts over the top of each.
5
Place the stuffed apples in a small baking dish or on a lined baking sheet and bake for 30-35 minutes, until the apples are tender when pierced with a knife but still holding their shape.
6
Remove from the oven and let rest for 5 minutes.
7
Divide between 2 individual dishes and top each with a spoonful of chilled Greek yogurt just before serving.
