Instructions

1
Preheat the oven to 190C (375F). Peel, core and cut the apple into thick wedges, tossing them with the lemon juice to stop browning.
2
In a small pan, warm the water with the sugar, crushed cardamom and cinnamon until the sugar dissolves into a thin syrup, about 2 minutes.
3
Divide the apple wedges between 2 small baking dishes (180ml each). Pour the warm syrup evenly over both, making sure the fruit sits in the liquid.
4
Cover each dish loosely with foil and bake for 25 minutes, then uncover and bake a further 10-15 minutes until the fruit is tender and lightly caramelised at the edges, basting once with the syrup.
5
Remove from the oven and let the dishes cool for 5 minutes while the syrup thickens slightly.
6
Whisk the cocoa powder and whey protein isolate into the Greek yogurt until completely smooth with no lumps.
7
Spoon the cocoa-protein yogurt over the warm baked fruit, scatter the fresh raspberries and chopped walnuts on top, and serve immediately.
