Baked Quince with Sugar Syrup

A classic Middle Eastern preparation in which halved quince is slow-baked under foil in a cardamom-and-cinnamon-scented sugar syrup until the flesh turns a deep rose colour and becomes meltingly soft, then finished with toasted walnuts and a cooling spoonful of yogurt.

Instructions

1
Preheat the oven to 180°C (350°F).
2
Peel, halve and core the fruit, then arrange the two halves cut-side up in two small baking dishes (ramekins).
3
In a small saucepan, combine the sugar, water, lemon juice, crushed cardamom pods and ground cinnamon; bring to a simmer and stir until the sugar fully dissolves, about 3 minutes.
4
Pour the hot syrup evenly over the fruit halves in the dishes, making sure some syrup pools around the base of each piece.
5
Cover the dishes tightly with foil and bake for 50-60 minutes, basting with the syrup every 20 minutes, until the fruit is deeply blushed pink and tender when pierced with a knife.
6
Uncover for the final 10 minutes to let the syrup reduce slightly and the tops caramelise at the edges.
7
Remove from the oven and let rest for 10 minutes so the syrup thickens as it cools.
8
Scatter the chopped walnuts over each portion and serve with a spoonful of whisked yogurt alongside, drizzling any remaining syrup from the dish over the top.
