Bacon Cheeseburger
A keto bacon cheeseburger built from a seared ground beef patty topped with sharp cheddar and crisp bacon, wrapped in butter lettuce instead of a bun. Sliced tomato, red onion and a mustard-mayo dressing add tang. Pan-fried in butter, finished with melted cheese under a lid, served open-faced.

Instructions
1
Prep
Shape the ground beef into a wide patty, season both sides with salt and pepper, pressing a shallow dimple in the centre.
2
Fry
Lay the bacon in a cold skillet and cook over medium heat for 6 minutes, turning once, until deep golden and crisp, then set aside.
3
Sear
Melt the butter in the same skillet over medium-high heat and sear the patty for 3 minutes until a dark brown crust forms.
4
Melt
Flip the patty, lay the cheddar on top, cover and cook over medium heat 3 minutes more until juices run clear and cheese melts.
5
Plate
Spread mayonnaise and Dijon mustard over a lettuce leaf, stack the patty, bacon, tomato and red onion, then wrap remaining leaves and serve open-faced.
