Apple Fritter Donuts
A lighter take on the classic apple fritter, these pan-fried donuts fold tender cinnamon-spiced apple pieces into a thin batter, fried until craggy and golden, then finished with a light cinnamon dusting instead of a heavy glaze.

Instructions
1
Peel and finely dice the apple into small cubes, about 55g worth, and toss with a pinch of the cinnamon.
2
In a bowl, whisk together the flour, baking powder, remaining cinnamon, sugar and salt.
3
In a separate small bowl, beat the egg with the skim milk, then pour into the dry ingredients and stir until just combined into a thick, lumpy batter.
4
Fold the diced apple through the batter, taking care not to overmix.
5
Heat the vegetable oil in a deep pan to 175°C (350°F), using a thermometer to monitor temperature.
6
Drop heaped spoonfuls of the batter into the hot oil, two fritters at a time, and fry for 2 minutes per side until deep golden brown and cooked through.
7
Lift the fritters out with a slotted spoon and drain on a wire rack set over paper towels.
8
While still warm, dust or toss the fritters in the allulose-cinnamon mixture.
9
Serve immediately while warm and crisp.
