Sikhye with Pomegranate and Pear
A traditional Korean sweet rice punch, sikhye is made by steeping malted barley water with cooked rice until the grains rise and float, then sweetening gently with brown sugar and ginger before a long chill. This version is finished with fresh pear, ruby pomegranate arils and a scatter of pine nuts for a bright, fruit-flecked take on the classic palate-cleansing dessert drink.
