Pandan Fried Dough Balls
A Vietnamese street-snack donut built from glutinous rice flour and pandan-infused coconut milk, deep-fried low and slow until the outside turns deep gold and the inside turns impossibly chewy and elastic. The dough puffs and crackles gently in the oil, and a toasted sesame coating gives each warm ball a nutty, crisp finish against the sweet, grassy pandan flavour underneath.
