Orange Blossom Butter Cookies
A delicate Middle Eastern butter cookie scented with orange blossom, built on a short, sandy dough of butter, flour and cornstarch that bakes to a pale, melt-in-the-mouth crumb. Finished with a scatter of chopped pistachio, it echoes the perfume of ma'amoul without the date filling.

Instructions
1
Beat the softened butter and sugar together until pale and fluffy, about 2 minutes.
2
Mix in a few drops of orange blossom essence (carried by the orange zest and vanilla extract) until fragrant.
3
Sift the flour, cornstarch and salt together, then fold into the butter mixture until a soft dough forms.
4
Divide the dough into 2 portions and shape each into a small domed round or classic ma'amoul-style disc.
5
Place on a baking sheet lined with parchment, spaced apart, and chill briefly if the dough feels soft.
6
Bake at 160°C (320°F) for 14-16 minutes until the base is just golden but the top stays pale.
7
Cool completely on a wire rack, as the cookies firm up as they cool.
8
Sprinkle the finely chopped pistachio over the cookies just before serving.
