Honey Walnut Pastry Cups
A Turkish-leaning pastry treat where crisp, short buttery tart shells cradle a dense, sticky filling of chopped walnuts bound with honey, cinnamon and a touch of lemon. Baked until just set, the cups are finished with a warm honey drizzle for extra shine and sweetness.

Instructions
1
Rub the cold cubed butter into the sifted flour, sugar and salt until the mixture resembles coarse breadcrumbs, then add the ice water a little at a time and bring together into a firm dough.
2
Wrap the dough in cling film and rest it in the fridge for 30 minutes to relax the gluten before rolling.
3
Roll the chilled dough thin on a floured surface and line two 8cm tart tins, trimming the edges and pricking the bases with a fork.
4
Chill the lined tins for 10 minutes, then blind bake at 190C for 10 minutes until pale golden, and set aside to cool slightly.
5
Mix the chopped walnuts with the 32g honey, melted butter, cinnamon and lemon juice until evenly combined into a thick, sticky filling.
6
Spoon the walnut filling into the baked tart shells, spreading level, then return to the oven at 180C for 12-14 minutes until the filling is bubbling and set at the edges.
7
Cool the tarts on a wire rack for at least 15 minutes, then drizzle the warmed honey over the top just before serving.
