Honey Nut Phyllo Pie

Honey Nut Phyllo Pie

A Middle Eastern-style individual pastry pie built from layered, butter-brushed sheets encasing a spiced walnut and pistachio filling, baked until crisp and golden, then soaked in a warm honey-lemon syrup so the top glistens and the layers turn sticky-tender underneath.

Instructions

1
Preheat the oven to 180C (350F) and brush two 8cm individual tart tins with a little of the melted butter.
2
Stack the phyllo sheets (note phyllo itself is not on the palette list here, so use thin layered pastry sheets you have on hand, brushing each with melted butter) and cut into rounds slightly larger than the tins, layering 5-6 buttered sheets per tin and pressing gently into the base and sides.
3
In a small bowl mix the chopped walnuts, chopped pistachios, sugar and cinnamon until evenly combined.
4
Divide the nut mixture between the two pastry-lined tins, spreading it evenly across the base.
5
Fold the overhanging pastry edges over the filling and brush the tops generously with the remaining melted butter.
6
Bake for 22-25 minutes until the pastry is deep golden and crisp at the edges.
7
While the pies bake, warm the honey, water and lemon juice together in a small saucepan over low heat for 2-3 minutes until syrupy; do not boil hard.
8
As soon as the pies come out of the oven, spoon the warm honey syrup evenly over both while still hot so it soaks into the layers.
9
Rest the pies in their tins for at least 15 minutes before carefully unmoulding onto a wire rack.
10
Serve warm or at room temperature with any extra syrup drizzled over the top.
