Guava Ate (Mexican Fruit Paste)
A dense, jewel-toned Mexican ate made by slow-reducing fresh fruit with sugar and lime until it sets into a firm, sliceable paste, the same technique used for classic membrillo-style dulces across Mexico.

Instructions
1
Peel, seed and roughly chop the fruit, then simmer with the water in a small heavy saucepan over medium heat for 8-10 minutes until completely soft.
2
Blend or mash the cooked fruit to a smooth puree, then return it to the pan.
3
Add the sugar and lime juice, stirring to dissolve, and cook over low-medium heat, stirring constantly with a wooden spoon to prevent scorching.
4
Continue cooking for 20-25 minutes, scraping the bottom and sides, until the paste pulls cleanly away from the pan and holds a mounded shape on the spoon.
5
Scrape the thick paste into a small parchment-lined 10x10cm tin, pressing it flat and level with the back of a spatula.
6
Leave uncovered at room temperature for at least 4-6 hours, or until a dry, non-sticky skin forms on top.
7
Turn the set paste out, cut into 2 pieces, and dust lightly or leave bare before serving.
