Fresas con Zumo de Naranja

A simple Spanish summer classic where ripe strawberries are macerated in fresh orange juice and a touch of sugar until they turn glossy and syrupy, then served chilled with a scatter of fresh mint. It relies entirely on good fruit and patience rather than technique, making it one of the most honest fresh fruit desserts in the Spanish repertoire.

Instructions

1
Hull the strawberries and halve or quarter them depending on size, then place them in a mixing bowl.
2
Squeeze the orange to extract fresh juice, straining out any pips.
3
Sprinkle the sugar over the strawberries and toss gently, then pour the orange juice over the top and stir to coat evenly.
4
Cover the bowl and refrigerate for at least 30 minutes so the strawberries release their juices and macerate in the orange juice.
5
Divide between two bowls, scatter with the sliced mint just before serving, and serve chilled.
