French Butter Shortbread Cookies
A classic French butter shortbread, sablé-style: short, sandy-textured cookies built almost entirely on the strength of good butter, with cornstarch worked into the flour for extra tenderness and a delicate, melt-away crumb.

Instructions
1
Cream the softened butter and sugar together in a bowl until pale and light, about 2 minutes by hand.
2
Sift the flour, cornstarch and salt together, then fold into the butter mixture along with the vanilla extract until a smooth, soft dough forms.
3
Shape the dough into a small disc, wrap, and chill for 30 minutes until firm enough to roll.
4
Roll the dough out to roughly 1cm thickness on a lightly floured surface and cut into 2 rounds using a glass or cutter.
5
Prick each round a few times with a fork and place on a baking sheet lined with parchment.
6
Bake at 160°C (320°F) for 16-18 minutes until the edges are just turning pale gold, not brown.
7
Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely until crisp.
