Egg White Milk Custard

Egg White Milk Custard

A classic Cantonese steamed egg white milk pudding (don tai, or 'frozen' milk custard without the frozen bit), prized for its impossibly silky, pure-white, trembling set achieved by gently steaming sweetened milk and egg whites together. Strained twice and steamed low and slow, it carries almost no eggy flavour, just clean dairy sweetness and a glass-smooth texture.

Instructions

1
Warm the whole milk gently in a small pan until lukewarm (do not boil), then stir in the sugar until fully dissolved and set aside to cool slightly.
2
In a bowl, whisk the egg whites very gently with a fork just until loosened and combined, taking care to avoid building up foam or bubbles.
3
Stir the vanilla extract into the warm milk, then slowly pour the milk into the egg whites in a thin stream while stirring gently in one direction.
4
Pass the mixture through a fine sieve twice into a jug to remove any bubbles and chalazae, giving the smoothest possible texture.
5
Skim off any remaining surface bubbles with a spoon, then divide the mixture evenly between two 180ml ramekins or small heatproof pots.
6
Cover each pot loosely with foil or a small plate to stop condensation dripping in, then place in a steamer over gently simmering water.
7
Steam on low-medium heat for 10-12 minutes, until the custard is just set with a gentle wobble in the centre, then turn off the heat and rest covered for 2 minutes before removing.
8
Serve warm, or chill briefly if a cooler custard is preferred.
